Facts in brief:
The Defendant processes and supplies sausage casings internationally. The victim worked as a machine operator. The victim was operating a sausage casing machine when her hand became trapped in the in-running nip-point between two rollers. Her hand was trapped for approximately 20 minutes before the roller was cut from the machine to free her. She suffered a broken wrist and de-gloving of the back of her hand.
